The season of Lent is upon us

...and I've decided on what I'm giving up: C-H-O-C-O-L-A-T-E!!!

Yep, I'm gonna do it...all forms and colors of chocolate, except for the teaspoon of unsweetened cocoa that I put in my oatmeal. :) That's the only way I'll eat the oatmeal and I only eat it 2-3 times a week (if that). So, other than that, no chocolate for 40 days!

Friday, 2/13 through Sun, 2/15

Friday the 13th lived up to it's name. My day was a day from hell. It started out good. Got up at 4:30am, headed to the gym at 5am, did the 5:30am spin class, headed back home and helped get my daughter off to school, got in the shower and ready for work, had my breakfast and was about to head out when my day went S-O-U-R to put it mildly.

Let me just say that I had my day planned out and all that went out the door. I was going to head into work early so that I could make a stop before work to get my hubby's VDay gift. I was then going to work super hard on this document that I have due this coming week. At lunch, I was going to go keep my brother's cat company...my bro was out of town, he lives 2 blocks from where I work, so I was going to head to his place over my lunch hour to work and keep Leo company. I would then head back to work, work super hard, leave work on time and we were going to take my hubby and I were going to take our daughter out on a date. :) NONE of that happened.

I was about to shutdown my laptop and head out the door Friday morning when I got a call from my boss that there were production problems at work due to some code that was released Thursday night and I had to start looking into it right away. I sat right back down, worked until noon, packed up, headed into work and worked until 7pm and then I still had to head to my bro's apartment to feel Leo. Needless to say, I didn't get home until 8pm.

Anyways, so for food journaling...I didn't really keep track but I'll try to remember what all I ate, although I can tell you my eating sucked!

no tone and sculpt class today...I went over the lunch hour for the class, like I usually do, and only 2 people showed up...they won't teach class unless there are at least 3. :( I could have stayed and done weights on my own, but I had too much on my mind (work, etc)...so I headed home and made VDay cupcakes for my daughter and friends and then got back to work.

Blueberry Apple Pancake Shake-Up

I got this recipe from the Hungry-Girl cookbook and they were pretty yummy!

Ingredients
1/3 cup regular otas (not instant)
2 tablespoons dry pancake mix
1/3 cup peeled and finely chopped apples
1/4 cup blueberries
1/4 cup fat-free liquid egg substitute
1 tablespoon fat-free cottage cheese
1/4 teaspoon vanilla extract
1 tablespoon splenda no calorie sweetener (granulated)
dash of salt

Directions
Place all ingredients except for the blueberries and apples in a medium bowl. Add 3 tablespoons of water ans stir until thoroughly mixed.

Gently fold in apples and blueberries.

Over medium heat, in a large pan sprayed with nonstick spray, evenly pour batter to form 3 pancakes. Once pancakes begin to look solid (after about 3 minutes), gently flip.

Cook for 3 additional minutes or until both sides are lightly browned and insides are cooked through. Now plate your pancakes and enjoy.

PER SERVING (3 pancakes):
252 calories, 2.5g fat, 517mg sodium, 44g carbs, 4g fiber, 12g sugars, 13g protein

Moving onward and upward...

This last week and weekend have just been aweful where my eating is concered. I have made some pretty unhealthy choices, over indulged, etc. My working out has been consistent but my eating healthy has been lacking.

So, I stopped journaling on Friday.

Today is the start of a new week and I'm getting back on the wagon. So, here's to a good day, good week, good month!
